Almond and Sultana Pancakes Recipe

Ingredients

Makes 3 Servings

  • 250ml coconut milk
  • 3 medium eggs
  • 150g almond flour
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • 30g protein powder (optional, add to keep to below macros)
  • 1 tsp coconut oil
  • 2 tbsp. sultanas
  • 1 tbsp honey

Directions

  • Mix together the coconut milk, eggs, flour, cinnamon, nutmeg and protein powder (if using) in a blender.
  • Heat up the oil in a non-stick frying pan until hot. Place the mixture in small batches, 2 tbsp a pancake, and drop a few sultanas onto the pancakes.
  • Cook until bubbles form and the bottom is brown, then flip over and cook until browned on the other side. Repeat until mixture is gone. Top with a drizzle of honey.
