Digestive Biscuits Recipe

Ingredients

  • 25g coconut flour
  • 50g almond flour (not ground almonds)
  • 30g pea protein
  • 25g maca powder
  • 1 tsp bicarb/baking soda
  • 1 tsp apple cider vinegar
  • 85g coconut oil, melted
  • 25g light tahini
  • 1 dropper full sweet leaf vanilla cream stevia
  • 100ml water, or to bind

Directions

  • Preheat your oven to 200c
  • Combine all dry ingredients in a medium mixing bowl, except the bicarb.
  • Add the wet ingredients, apple cider vinegar last and then add the bicarb on top of the vinegar. It’ll bubble and be cool.
  • Mix it all up with your hands until it comes together into a ball.
  • Roll it out between two pieces of teflex or waxed baking paper and score into squares. You can get more time involved and cut into circles and then re roll, re cut, etc.. until all dough is gone, but ain’t nobody got time for that.
  • Once scored, you’re gonna back these right on the sheet you used to roll em out. Simples. Bake for 10 minutes, rotate the tray and keep em going till golden brown.
  • Cool em on a cookie rack/cooling rack and then store in an air tight container till you demolish them. And you will demolish them. You’ve been warned.
