Chicken Mince Mushrooms Recipe | Burn

Ingredients

  • 4 large Portabello mushrooms, stems removed
  • 2.5 tbsp coconut oil
  • 100g chicken mince
  • ½ red onion, chopped
  • 1 garlic clove, minced
  • Handful fresh parsley, chopped
  • 2 sprigs fresh thyme, leaves only, chopped
  • Salt and pepper to taste

Directions

  • Preheat oven to 220’C.
  • In a frying pan add ½ tbsp coconut oil and then add the chicken, onion, garlic, parsley and thyme and stir everything together cooking for a good 10 minutes, or until the chicken is cooked.
  • Place the mushrooms in a roasting pan and place on top of each mushroom ½ tbsp coconut oil.
  • Evenly place the chicken mix on top of each mushroom. Bake on the top shelf in the oven for 10 minutes.
  • Season to taste. Serve hot.
