Almond and Sultana Pancakes Recipe
SERVES 3
Ingredients
- 250ml coconut milk (for SCD diet please use home made coconut milk)
- 3 medium eggs
- 150g almond flour
- ½ tsp cinnamon
- ½ tsp nutmeg
- 30g protein powder (optional, add to keep to below macros)
- 1 tsp coconut oil
- 2 tbsp. sultanas
- 1 tbsp honey
Directions
- Mix together the coconut milk, eggs, flour, cinnamon, nutmeg and protein powder (if using) in a blender.
- Heat up the oil in a non-stick frying pan until hot. Place the mixture in small batches, 2 tbsp a pancake, and drop a few sultanas onto the pancakes.
- Cook until bubbles form and the bottom is brown, then flip over and cook until browned on the other side. Repeat until mixture is gone. Top with a drizzle of honey.
