Almond Ginger Cake Recipe

Ingredients

  • 200g ground almonds
  • ¾ tsp baking powder
  • ½ tsp salt
  • 2 tbsp ground ginger
  • ¾ tsp nutmeg
  • 1 tsp cinnamon
  • 3 eggs
  • 70ml honey
  • 1 tsp vanilla essence
  • 130g melted coconut oil
  • 50g sultanas
  • 50g dried cranberries

Directions

  • A really really easy cake to make. Preheat oven to 180’C and grease a loaf tin with coconut oil.
  • Mix all the wet ingredients together and whisk well. Mix all dry ingredients together and mix well. Pour the wet ingredients into the dry and mix well. Mix the sultanas and cranberrys in last.
  • Pour your mixture into the loaf tin and bake in the oven for 30 minutes or until you can cleanly pull out a knife from the middle. Once cooked, take out of the oven and out of the tin and leave on a cooling rack to cool.
