Blueberry Granola Base Recipe

Ingredients

  • 235g raw almonds
  • 160g raw pecans
  • 80g sunflower seeds
  • 70g unsweetened shredded coconut
  • 60g flaxseed meal
  • 200g almond butter
  • 2 tsp vanilla extract
  • 3 tbsp raw honey / maple syrup
  • 3 tbsp coconut oil, melted
  • 240g fresh or frozen blueberries

Directions

  • Preheat the oven to 100°C.
  • In a food processor ground the almonds, pecans and sunflower seeds until just coarsely chopped and then put them into a large mixing bowl.
  • Add the shredded coconut and flaxseed meal and mix. In a small pan on low heat mix the almond butter, vanilla, honey / maple syrup and coconut oil and mix until combined and runny.
  • Add this mixture into the large bowl with the blueberries and mix until well combined.
  • Spread the mixture evenly on a parchment or foil lined baking sheet. Bake for around 4 hours, or until dry and crispy and cool on a wire rack.
  • Store in airtight container or in the fridge.
