Buckwheat Pancakes Recipe
Ingredients
- 80g Buckwheat flour
- 1 egg
- 210ml coconut milk (from a carton)
- 10g protein powder
- ½ tsp coconut oil
- 1 tbsp 0% fat yoghurt
- 80g berries (strawberries / rasberries / blueberries / blackberries)
- Juice from ½ orange
Directions
- In a bowl beat together the flour, eggs, milk and protein powder until it’s a nice smooth paste. You can add water if it goes too thick (a little bit at a time).
- Put a pan on medium heat and add the oil. Add the batter to the size of pancakes you want.
- Cook until it’s golden and then flip carefully and cook until golden on the other side. Serve the pancakes and add the yoghurt on top and your choice of fruit.
- Dribble over the orange juice. You can also chop the fruit up small and add to the batter and cook within the pancakes too if you prefer.
