Butter Bean Dhal Recipe
SERVES 3
Ingredients
- 1 tbsp coconut oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 500ml vegetable stock
- 100g red split lentils
- 1 tsp ground turmeric
- 1 tsp paprika
- 1 tsp ground cumin
- 1/2 tsp cayenne pepper
- 1/2 tsp salt
- 1 tin butter beans, drained and rinsed
- 50g fresh spinach
Directions
- In a saucepan fry the onion and garlic for a few minutes in the coconut oil.
- Add the stock, lentils, spices and salt and bring to the boil.
- Add the butter beans and reduce to a simmer.
- Simmer for 20 minutes until it becomes nice and thick or until the lentils are soft.
- Add the spinach and stir for 3 minutes.
- Serve hot.
