Butter Bean Dhal Recipe

SERVES 3

Ingredients

  • 1 tbsp coconut oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 500ml vegetable stock
  • 100g red split lentils
  • 1 tsp ground turmeric
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 1 tin butter beans, drained and rinsed
  • 50g fresh spinach

Directions

  • In a saucepan fry the onion and garlic for a few minutes in the coconut oil.
  • Add the stock, lentils, spices and salt and bring to the boil.
  • Add the butter beans and reduce to a simmer.
  • Simmer for 20 minutes until it becomes nice and thick or until the lentils are soft.
  • Add the spinach and stir for 3 minutes.
  • Serve hot.
