Cherry Chia Pudding Recipe

Ingredients
- 650ml coconut milk
- 120g pitted cherries
- 60g protein powder (optional, use to stick to below macros)
- 1 tsp honey / maple syrup
- 1 tsp vanilla essence
- 70g chia seeds
Topping
- 25g cashew nuts (soaked in water for min 1 hour then drained)
- 70g cherries
- 1 tsp honey / maple syrup
- ¼ tsp vanilla essence
- 2 tbsp water
Directions
- Blend together the milk, cherries, protein powder (if using), 1 tsp honey / maple syrup and 1 tsp vanilla. Then pour over the chia seeds in a bowl and mix together. Leave for 5 minutes and give this another stir. Allow to set in the fridge for 2 hours or overnight.
- To make the topping add all topping ingredients into a blender and blend until smooth. To serve, separate the pudding mixture into two bowls and then divide the topping between the two bowls and pour over the top.
