Chicken Mince Mushrooms Recipe
Ingredients
- 4 large Portabello mushrooms, stems removed
- 2.5 tbsp coconut oil
- 100g chicken mince
- ½ red onion, chopped
- 1 garlic clove, minced
- Handful fresh parsley, chopped
- 2 sprigs fresh thyme, leaves only, chopped
- Salt and pepper to taste
Directions
- Preheat oven to 220’C.
- In a frying pan add ½ tbsp coconut oil and then add the chicken, onion, garlic, parsley and thyme and stir everything together cooking for a good 10 minutes, or until the chicken is cooked.
- Place the mushrooms in a roasting pan and place on top of each mushroom ½ tbsp coconut oil.
- Evenly place the chicken mix on top of each mushroom. Bake on the top shelf in the oven for 10 minutes.
- Season to taste. Serve hot.
