Chocolate Balls Recipe

Ingredients

  • 140g almonds
  • 200g pitted medjool dates
  • 1/2 cup water
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • 60g chocolate protein powder
  • 3 tablespoons unsweetened cacao powder
  • 100g cashew nuts
  • 50g shredded coconut to cover

Directions

  • Place the almonds in a food processor and mix until fine and starting to get creamy.
  • Add the dates, water, coconut oil, vanilla and salt. Mix until smooth.
  • Then add the protein powder and cocoa powder and mix until smooth again, this will be quite sticky.
  • Add the cashew nuts and mix until either crunchy or smooth depending what texture you like.
  • With wet hands roll the mixture into balls and then roll into the shredded coconut until covered.
  • Store in a container in the fridge.
