Chocolate Pumpkin Pots

A fun recipe to have on Halloween which the kids will love helping with. A really easy chocolate pot and even more fun as you get to draw faces on some fruit!

SERVES 8

Ingredients

  • 10 mandarins/satsumas/clementines
  • 200g cashew nuts (soaked in water for at least 2 hours)
  • 320ml coconut cream
  • 45g cacao powder
  • 1.5 tbsp honey
  • Fresh mint
  • Black pens

Directions

  • Slice the top off the mandarins and pull the insides out without ripping the skin. The flesh isn’t needed for the recipe so eat this whenever you like.
  • Blend the drained nuts, coconut cream, cacao and honey together until smooth. Using a spoon, spoon in the chocolate mixture into each mandarin until the mixture is gone. Pop them in the fridge to set for 1-2 hours.
  • Make a small slit in the lids and pop in some mint leaves and draw faces on the mandarins with your pen. Serve with a little spoon and enjoy!
