Christmas Banana Bread

Our friend Jess over at the Menorcan Retreats gave us this great banana bread recipe. I have just added some Christmas spices and dried fruit to give it some holiday spirit!



  • 300g ripe banana, mashed
  • 30g butter at room temp
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp nutmeg
  • 1 tsp ground ginger
  • 1/2 tsp bicarb of soda
  • 3 eggs
  • 1 tbsp lemon juice
  • 2 tbsp orange juice
  • Zest from 1/2 lemon
  • Zest from 1/2 orange
  • 220g ground almonds
  • 30g flax seed
  • 1/2 tsp pink rock salt
  • 80g dried cranberries


  • Preheat oven to 170’C and line a bread tin with baking paper.
  • Blend all ingredients except the cranberries together in a food processor and mix until smooth. Stir the cranberries in and then pour into the tin and pop in the oven for 1 hour or until a knife comes out clean.
  • Keep in the fridge for up to a week or cut into slices and freeze.
  • You can cut it into any amount of slices you like. But for macro sake I’ll do it as 12 slices per loaf.
