Coconut Butter Fruit Bars Recipe

Ingredients

  • 2 cups coconut butter
  • 2 cups fruit (I used raspberries and strawberries)
  • 1⁄2 cup honey / maple syrup
  • 1⁄2 tsp vanilla extract
  • Raw cacao flakes or nibs to sprinkle on top

Directions

  • Melt the coconut butter on a medium heat until it turns soft and creamy (or if you have made it fresh it will still be runny and so you won’t need to heat). Place the coconut butter into a food processor with the fruit, honey / maple syrup and vanilla extract. Process until smooth.
  • Pour the mixture into a small roasting pan lined with baking paper and smooth out evenly. Sprinkle the raw cacao on top. Place in the fridge to set for 1 hour. Once set, you can cut into shapes or squares. Keep in an air tight container in the fridge or freezer.
