Double Chocolate Protein Cookies Recipe

SERVES 6

Ingredients

  • 60g light tahini (or any nut butter)
  • 50g water
  • 5g tamari
  • 1/4 tsp cardamom powder
  • 1 tsp vanilla powder or extract
  • 50g maple syrup or your choice of liquid sweetener, even date paste would work
  • 30g chocolate powder, raw or cooked
  • 25g pea protein powder, or your protein powder of choice
  • 40g ground almonds, not almond flour
  • 30g 100% dark chocolate, chopped

Directions

  • Pre heat your oven to 180c and start feelin’ the tunes
  • In a medium mixing bowl, combine the first set of ingredients and whisk it up real good and proper like.
  • Add the second set of ingredients, whisk it up, add the chocolate chunks and then let it sit for 5 minutes to thicken. Dance around in the mean time and be merry and thankful for your life.
  • Damped your hands and roll the dough into 6 equal balls, using a dampened cookie stamp, flatten em up. Alternatively, press them into cookie shapes and then go buy some cookie stamps on Amazon.
  • Line a baking tray with teflex or grease proof paper, pop the cookies on and bake em for like 8 minutes, turn the tray and bake another 5-6 or until their bottoms are browned.
