Egg Muffins Recipe

Ingredients
- 75g beef mince
- 3 eggs
- 65g red onion, finely chopped
- 100g red pepper, finely chopped
- 1 tsp coconut oil
Directions
- Preheat the oven to 180’C. In a frying pan cook the beef mince until cooked (around 10 minutes).
- Beat the eggs together in a bowl and add the mince, onion and pepper and some salt and pepper and mix well.
- Grease some muffin tins with the coconut oil and then pour the mixture in each muffin tin.
- Bake in the oven for 20 minutes or continue cooking until a knife comes out clean when placed through middle.
- You can double, triple or quadruple this recipe to batch cook.
