Egg Muffins Recipe

Ingredients

  • 75g beef mince
  • 3 eggs
  • 65g red onion, finely chopped
  • 100g red pepper, finely chopped
  • 1 tsp coconut oil

Directions

  • Preheat the oven to 180’C. In a frying pan cook the beef mince until cooked (around 10 minutes).
  • Beat the eggs together in a bowl and add the mince, onion and pepper and some salt and pepper and mix well.
  • Grease some muffin tins with the coconut oil and then pour the mixture in each muffin tin.
  • Bake in the oven for 20 minutes or continue cooking until a knife comes out clean when placed through middle.
  • You can double, triple or quadruple this recipe to batch cook.
