Kale Sprouted Beans & Goji Berry Salad Recipe
SERVES 3
Ingredients
- 200g kale, stalks removed, washed and chopped
- pinch salt
- 1 tsp lemon juice
- 1 tbsp olive oil
- 50g sesame seeds
- 200g sprouted lentil, peas and beans mix
- 50g goji berry
Dressing
- ½ garlic clove
- 1 tbsp tahini
- 10 cashew nuts
- 1 tbsp lemon juice
- ½ tsp ground coriander
- ½ tsp ground cumin
- ½ tsp smoke paprika
- pinch cayenne pepper
- 1 tbsp olive oil
Directions
- In a large bowl place in the kale and sprinkle with the salt and add the lemon juice and olive oil.
- Massage the kale for 2-3 minutes until it goes more tender and turns a darker green.
- Toast the sesame seeds in a dry frying pan on high heat until just starting to brown, add these to the kale bowl and the rest of the ingredients.
- To make the dressing blend together all dressing ingredients. Add this to the bowl of ingredients and mix well and serve.
