Kale Sprouted Beans & Goji Berry Salad Recipe

SERVES 3

Ingredients

  • 200g kale, stalks removed, washed and chopped
  • pinch salt
  • 1 tsp lemon juice
  • 1 tbsp olive oil
  • 50g sesame seeds
  • 200g sprouted lentil, peas and beans mix
  • 50g goji berry

Dressing

  • ½ garlic clove
  • 1 tbsp tahini
  • 10 cashew nuts
  • 1 tbsp lemon juice
  • ½ tsp ground coriander
  • ½ tsp ground cumin
  • ½ tsp smoke paprika
  • pinch cayenne pepper
  • 1 tbsp olive oil

Directions

  • In a large bowl place in the kale and sprinkle with the salt and add the lemon juice and olive oil.
  • Massage the kale for 2-3 minutes until it goes more tender and turns a darker green.
  • Toast the sesame seeds in a dry frying pan on high heat until just starting to brown, add these to the kale bowl and the rest of the ingredients.
  • To make the dressing blend together all dressing ingredients. Add this to the bowl of ingredients and mix well and serve.
