Lamb Meatballs Recipe

Ingredients

  • 80g lamb mince
  • 1 tsp garam masala
  • 1 tsp coconut oil
  • 1 red chilli, de seeded and finely chopped
  • 2 spring onions, chopped
  • ½ bunch fresh coriander, chopped
  • 2 cloves garlic, finely chopped or minced
  • 100g chick peas
  • 100ml passata
  • 3 tbsp tomato puree
  • 1 gem lettuce
  • 40g cucumber, chopped
  • 1 small tomato, chopped
  • 1 tbsp 0% fat Greek yoghurt
  • 1 tsp harissa paste
  • Juice from ½ lemon

Directions

  • In a bowl using your hands, mix together the mince and garam masala and season with some salt and pepper. Then roll the mixture into meatballs and place in a med/high heat pan with the coconut oil. Keep turning until golden.
  • Add the chilli, spring onions, coriander (reserving some leaves) and garlic to the pan and cook for a few minutes. Add the chickpeas, passata and tomato puree and then turn the heat to medium.
  • Place your lettuce, cucumber and tomatoes onto your plate. In a little dish mix together the yoghurt and the harissa and then place on the side. Sprinkle the lemon juice over the salad and then serve up the meatballs and sprinkle over the remaining coriander leaves.
