Lamb Meatballs Recipe

Ingredients

  • 125g lamb mince
  • 1 tsp garam masala
  • 1 tbsp coconut oil
  • 1 red chilli, de seeded and finely chopped
  • 2 spring onions, chopped
  • ½ bunch fresh coriander, chopped
  • 2 cloves garlic, finely chopped or minced
  • 100ml passata
  • 1 gem lettuce
  • 40g cucumber, chopped
  • 1 tbsp full fat Greek yoghurt
  • 1 tsp harissa paste
  • Juice from ½ lemon

Directions

  • In a bowl using your hands, mix together the mince and garam masala and season with some salt and pepper.
  • Then roll the mixture into meatballs and place in a med/high heat pan with the coconut oil. Keep turning until golden.
  • Add the chilli, spring onions, coriander (reserving some leaves) and garlic to the pan and cook for a few minutes. Add the passata and then turn the heat to medium.
  • Place your lettuce and cucumber onto your plate. In a little dish mix together the yoghurt and the harissa and then place onto the plate.
  • Sprinkle the lemon juice over the salad and then serve up the meatballs and sprinkle over the remaining coriander leaves.
