Lamb Meatballs Recipe
Ingredients
- 125g lamb mince
- 1 tsp garam masala
- 1 tbsp coconut oil
- 1 red chilli, de seeded and finely chopped
- 2 spring onions, chopped
- ½ bunch fresh coriander, chopped
- 2 cloves garlic, finely chopped or minced
- 100ml passata
- 1 gem lettuce
- 40g cucumber, chopped
- 1 tbsp full fat Greek yoghurt
- 1 tsp harissa paste
- Juice from ½ lemon
Directions
- In a bowl using your hands, mix together the mince and garam masala and season with some salt and pepper.
- Then roll the mixture into meatballs and place in a med/high heat pan with the coconut oil. Keep turning until golden.
- Add the chilli, spring onions, coriander (reserving some leaves) and garlic to the pan and cook for a few minutes. Add the passata and then turn the heat to medium.
- Place your lettuce and cucumber onto your plate. In a little dish mix together the yoghurt and the harissa and then place onto the plate.
- Sprinkle the lemon juice over the salad and then serve up the meatballs and sprinkle over the remaining coriander leaves.
