Leftover Turkey Thai Soup Recipe

Ingredients

  • 1 tsp coconut oil
  • 2 cloves garlic, crushed
  • 5 shallots, chopped
  • 10g fresh ginger, grated
  • 2 green chillies, de seeded and chopped finely
  • 500 ml chicken stock
  • 350ml canned coconut milk
  • juice from 1 lime
  • zest from 1 lime
  • 2 tbsp fish sauce
  • 2 stalks lemon grass, bruised
  • 1 tsp galangal (not essential)
  • 3 kaffir lime leaves
  • 50g radish, chopped
  • 200g turkey meat
  • half bunch fresh coriander, chopped

Directions

  • Not sure what to do with all your Christmas turkey leftovers, well why not make a quick and easy soup with it!?
  • In a large pan, heat up the coconut oil and add the garlic, shallots, ginger and chillies and cook for a few minutes on a high heat.
  • Then add all other ingredients and stir well. Cook for around 10 minutes. Discard the lemon grass and kaffir lime leaves. Then you are done! Simple.
