Mackerel Spinach and Tomatoes Recipe
A great morning breakfast incorporating some oily fish into your diet. Also goes well with a poached egg on top. Try with a variety of seasoning’s and also add mushrooms too if you prefer.
SERVES 2
Ingredients
- 4 small fresh mackerel fillets (240g)
- 1 tsp olive oil
- 1 large clove garlic, minced
- 250g tomatoes, chopped
- 120g spinach
- 1 tbsp freshly chopped parsley
Directions
- Cook the mackerel under a hot grill for 10 minutes or until cooked through.
- While that cooks, in a frying pan add the oil, garlic and tomatoes and cook on medium/high heat until they soften.
- Add the spinach and mix until wilted and mix in the parsley.
- Serve between 2 plates and top with 2 fillets on each.
- Season with salt and pepper.
