Mackerel and Tomatoes Recipe

A really simple breakfast idea for you. Packed full of great oily fish and some tomatoes to help ease the strong mackerel flavour. If you don’t have SIBO then you don’t need to cook the tomatoes, although they work really well cooked.

SERVES 1

Ingredients

  • 2 mackerel fillets
  • 3 tomatoes, cut into halves
  • Olive oil (1 tsp)
  • Salt and pepper

Directions

  • Cook the mackerel and tomatoes under a hot grill for 8 minutes or until the fish is cooked through.
  • Serve and drizlle a little olive oil over everything and season.
