Mackerel Spinach and Tomatoes Recipe

A great morning breakfast incorporating some oily fish into your diet. Also goes well with a poached egg on top. Try with a variety of seasoning’s and also add mushrooms too if you prefer.



  • 4 small fresh mackerel fillets (240g)
  • 1 tsp olive oil
  • 1 large clove garlic, minced
  • 250g tomatoes, chopped
  • 120g spinach
  • 1 tbsp freshly chopped parsley


  • Cook the mackerel under a hot grill for 10 minutes or until cooked through.
  • While that cooks, in a frying pan add the oil, garlic and tomatoes and cook on medium/high heat until they soften.
  • Add the spinach and mix until wilted and mix in the parsley.
  • Serve between 2 plates and top with 2 fillets on each.
  • Season with salt and pepper.
