Mango Chia Pudding Recipe

Ingredients

  • 300g frozen mango
  • 200ml water
  • 350ml coconut milk
  • 2 dates (pitted)
  • 1 tsp vanilla essence
  • 40g vanilla protein powder (optional, use to stick to below macros)
  • 50g chia seeds
  • 1 tbsp macadamia nuts

Directions

  • Blend the mango and gradually add the water a bit at a time until all the mango is smooth, you may not need all the water. Pour the pureed mango into 2 bowls and pop them in the fridge.
  • Blend together the milk, dates, vanilla and protein powder (if using) until smooth. Pour into a bowl and the chia seeds and mix. Leave for 5 minutes and then mix again. Pour this mixture over the mango and top with macadamia nuts. Leave to set in the fridge for 2 hours or overnight.
