Mince Pies Recipe

These mince pies are pretty simple to make and what’s best is the smell. It fills your house with the smell of Christmas making the mincemeat. They aren’t vegan but if you wanted a vegan version just swap the butter for coconut oil and use ground chia seeds with water to make the egg. This mixture should make roughly 12 pies.

Ingredients

Pastry

  • 200g ground almonds
  • 1/4 tsp salt
  • 1/4 tsp bicarbonate of soda
  • 1 1/2 tbsp maple syrup
  • 15g butter
  • 1 egg

Mincemeat

  • 80g sultanas
  • 20g dried cranberries
  • Juice and zest of 1 orange
  • Juice and zest of half lemon
  • 1 tsp ground cinnamon
  • pinch of nutmeg
  • pinch of ginger
  • 25g coconut oil
  • 2 small apples, cored and grated

Directions

  • Preheat oven to 180’C. Use a 12 slot muffin tin and grease with butter and cut out 12 small circles of baking paper to pop in the bottom of each slot.
  • Make the pastry first by adding all ingredients into a food processor and mix. Set aside.
  • Make the mincemeat by placing all those ingredients into a pan and cook on low/medium heat with a lid on for 10 minutes until the dried fruit has softened. Stir occasionally so it doesn’t stick. The smell is amazing!
  • Using half of the pastry, roll this out between 2 sheets of baking paper until less than half a centimetre thick. Cut out circles with a pastry cutter so the size is the same diameter of the muffin slots. Keep re using the pastry including the second half too until you have 12 large cut outs and 12 small ones to use on the top (put the small ones aside). Place the larger ones in each muffin slot and push down a little to shape around the tin. If any pastry tears you can press it against the sides to put it back together.
  • Bake these cases in the oven for 8 minutes until very slightly golden.
  • Place 1-1.5 tsp of mincemeat into each case and top with the smaller circles. You can also cut these tops into shapes of stars or anything Christmassy!
  • Brush each top with some melted butter and bake in the oven for 10-12 minutes until the tops are slightly golden.
  • Remove from the oven and let them cool for 5 minutes.
