Moroccan Chicken Recipe

This is a punchy flavoured dish. Would go really well with a side of vegetables of your choice. If you’re not sure about eating olives in a cooked main dish, then try this one as it will help you try it.



  • 500g chicken
  • 3 spring onions, green part only
  • 3 tbsp fresh coriander, chopped
  • 1 tbsp turmeric
  • 2 tsp ground ginger
  • 2 tsp ground cinnamon
  • 2 cups broth (onion and garlic free)
  • 2 cups pitted green olives
  • 1 tbsp lemon juice


  • Preheat oven to 180’C. In a roasting dish add the chicken, spring onion, coriander, turmeric, ginger, cinnamon and broth and mix well. Bake in the oven fr 30 minutes.
  • Add the olives and lemon juice and cook for a further 15 minutes or until the chicken is cooked through.
