Panna Cotta Recipe

SERVES 6

Ingredients

  • 800ml canned coconut milk (for SCD diet please use home made coconut milk)
  • 1 tbsp great lakes red can gelatin
  • 6 tbsp freeze dried strawberries
  • 10 large fresh mint leaves
  • 2 tbsp honey
  • 2 tsp vanilla extract

Directions

  • Pour the cans of coconut milk into a pan and gently heat. Add the gelatin, freeze dried strawberries and mint leaves and simmer for 5 minutes.
  • Add in the honey and vanilla extract and give it all a good stir. Transfer the liquid into a blender and blend until smooth. Pour the mixture into 6 small glass containers.
  • Leave on the side to cool before putting into the fridge. Place in the fridge for minimum 3 hours to set.
  • Place on top a mint leaf and sprinkle with some freeze dried strawberries for decoration.
