Panna Cotta Recipe
SERVES 6
Ingredients
- 800ml canned coconut milk (for SCD diet please use home made coconut milk)
- 1 tbsp great lakes red can gelatin
- 6 tbsp freeze dried strawberries
- 10 large fresh mint leaves
- 2 tbsp honey
- 2 tsp vanilla extract
Directions
- Pour the cans of coconut milk into a pan and gently heat. Add the gelatin, freeze dried strawberries and mint leaves and simmer for 5 minutes.
- Add in the honey and vanilla extract and give it all a good stir. Transfer the liquid into a blender and blend until smooth. Pour the mixture into 6 small glass containers.
- Leave on the side to cool before putting into the fridge. Place in the fridge for minimum 3 hours to set.
- Place on top a mint leaf and sprinkle with some freeze dried strawberries for decoration.
