Poached Eggs and Salmon Recipe

A simple breakfast that’s low on the carbs. It’s really not even a recipe, but just something here to give you an idea if you can’t decide what to eat. Try with any greens you like, like rocket or watercress.

SERVES 1

Ingredients

  • 2 medium free range eggs
  • 1 tbsp cider vinegar
  • 30g spinach
  • 60g smoked wild salmon
  • 1 tsp olive oil
  • Sprinkle chilli flakes

Directions

  • In a deep frying pan, fill with water until it’s 2-3 inches deep. Add the cider vinegar and bring to boil. Drop the eggs in for 4 minutes and remove.
  • While the eggs cook, pop the spinach and salmon on a plate and sprinkle over the olive oil.
  • Pop the eggs on top once done and season with salt and pepper and sprinkle over the chilli flakes.
