Quinoa and Roasted Brussels Salad Recipe

SERVES 6

Ingredients

  • 300g dried green lentils
  • 180g dried mixed colour quinoa
  • 1 litre water
  • 1 tsp curry powder
  • 225g brussel sprouts, halved and then thinly sliced
  • 80g shallots, thinly sliced
  • 1 tbsp coconut oil
  • 75g spring onions, chopped
  • Juice from half a lemon
  • Salt and pepper

Directions

  • Preheat oven to 200’C. In a large pan place in the lentils, quinoa, water and curry powder. Bring to the boil and stir well. Once boiling turn down to a simmer and cook for 25-30 minutes until everything is cooked (but still firm). Once ready, turn off the heat and cover.
  • Place a roasting dish in the oven with the coconut oil until it has melted. Place in the bruseel sprouts and shallots and mix around so they coat with the oil. Cook in the oven turning occasionally for 20-25 minutes until crispy.
  • Place the lentils and quinoa to a large bowl and add everything else and season with some salt and pepper.
