Red Thai Curry Paste Recipe

Ingredients

  • 4 tsp coriander seeds
  • 2 tsp cumin seeds
  • 4 medium red chillies, deseeded and chopped
  • 4 lemon grass stalks, trimmed and chopped
  • 2 tsp fresh ginger, grated
  • 6 shallots, peeled and chopped
  • 7 cloves garlic, peeled
  • grated zest and juice 2 limes
  • 2 tbsp hot paprika
  • 6 kaffir lime leaves
  • 1 tbsp galangal (optional)

Directions

  • In a hot pan add the coriander and cumin seeds and cook for 3-4 minutes until they become fragrant.
  • Pop them in the blender and blend until fine. Add all other ingredients and blend to a paste.
  • Pop the paste in small plastic bags with 2 tbsp in each and store in the freezer. 1 bag would do a thai curry for 4 people.
