Salmon and Cucumber Recipe

A pretty simple recipe created for the SIBO diet. If you’re looking for really clean recipe ideas then this is a great one. Keep it simple but still tasting great.



  • 1 wild salmon fillet
  • 1/2 lemon
  • 1 tbsp butter
  • 3 stalks fresh thyme (or 1tsp dried)
  • 8 cherry tomatoes
  • 1/4 cucumber, chopped
  • chives, chopped


  • Preheat oven to 180’C. Pop the salmon in a roasting pan and season with salt and pepper.
  • Cut lemon in half, save one half for later, slice the other half in slices and lay the slices evenly on top of the fillet.
  • Smear the butter on top of the lemon and add the thyme on top. Place the cherry tomatoes in the pan.
  • Bake in the oven for 10-20 minutes, until the salmon fillet is cooked through.
  • Mix the chives and cucumber together and serve next to the salmon and tomatoes. Squeeze the remaining lemon juice over everything.
