Salmon, Avocado & Eggs Recipe

With plenty of healthy fats, these ingredients go great together – a nice and simple breakfast that’s gluten free, dairy free and suitable for those with SIBO.

SERVES 1

Ingredients

  • 2 free range eggs
  • 1/8 avocado
  • 60g wild smoked salmon
  • 1 tbsp olive oil

Directions

  • Place a deep frying pan on the hob and half fill with water and bring to the boil. Once boiling crack open the eggs into the water and keep the heat on medium/ high. Cook for 4 minutes, or longer if you don’t like a runny egg.
  • Take the avocado out of the skin and cut into slices. Place the smoked salmon on the plate, add the avocado on top and then the eggs.
  • Season with salt and pepper and drizzle with oil.
