Steak Chimichurri Recipe

Ingredients

  • 200g new potatoes
  • 1 lemon
  • 1 tsp dried/fresh dill
  • 2 cloves garlic, peeled
  • 3 spring onions, topped and tailed
  • 1 tsp dried oregano
  • ¼ fresh red chilli
  • 1 small bunch fresh coriander
  • 2 tbsp red wine vinegar
  • 120g sirloin steak, remove the fat
  • 2 gem lettuce
  • 1 medium tomato
  • 5 stems fresh mint
  • ¼ punnet of cress
  • 75g raw peas
  • 2 tsp olive oil
  • 1 tbsp balsamic vinegar

Directions

  • Boil the new potatoes in a pan with the lemon, cook until a knife easily goes in. Using a blender add in the garlic, spring onions, oregano, chilli, coriander, red wine vinegar and add a splash of boiled water. Blend until smooth, season to taste and put in a small dish.
  • Fry the steak in a hot dry pan turning every minute until cooked to your liking. Chop the lettuce, tomatoes and mint and place on your plate. Sprinkle with the cress and peas and dress with the olive oil and balsamic vinegar.
  • Drain the potatoes and squish the cooked lemon around over them and then discard the lemon, season with salt and pepper and the dill. Add the potatoes to your plate along with your steak.
