Steak Chimichurri Salad Recipe
Ingredients
- 2 cloves garlic, peeled
- 3 spring onions, topped and tailed
- 1 tsp dried oregano
- ¼ fresh red chilli
- 1 small bunch fresh coriander
- 2 tbsp red wine vinegar
- 100g sirloin steak, remove the fat
- 2 gem lettuce
- 1 medium tomato
- 5 stems fresh mint
- ¼ punnet of cress
- 75g raw peas
- 2 ½ tbsp olive oil
- 1 tbsp balsamic vinegar
Directions
- Using a blender add in the garlic, spring onions, oregano, chilli, coriander, red wine vinegar and add a splash of boiled water. Blend until smooth, season to taste and put in a small dish.
- Fry the steak in a hot dry pan turning every minute until cooked to your liking.
- Chop the lettuce, tomatoes and mint and place on your plate.
- Sprinkle with the cress and peas and dress with the olive oil and balsamic vinegar.
- Then place on your steak and enjoy.
