Steak Chimichurri Salad Recipe

Ingredients

  • 2 cloves garlic, peeled
  • 3 spring onions, topped and tailed
  • 1 tsp dried oregano
  • ¼ fresh red chilli
  • 1 small bunch fresh coriander
  • 2 tbsp red wine vinegar
  • 100g sirloin steak, remove the fat
  • 2 gem lettuce
  • 1 medium tomato
  • 5 stems fresh mint
  • ¼ punnet of cress
  • 75g raw peas
  • 2 ½ tbsp olive oil
  • 1 tbsp balsamic vinegar

Directions

  • Using a blender add in the garlic, spring onions, oregano, chilli, coriander, red wine vinegar and add a splash of boiled water. Blend until smooth, season to taste and put in a small dish.
  • Fry the steak in a hot dry pan turning every minute until cooked to your liking.
  • Chop the lettuce, tomatoes and mint and place on your plate.
  • Sprinkle with the cress and peas and dress with the olive oil and balsamic vinegar.
  • Then place on your steak and enjoy.
