  • 1 Romano pepper, stems and core removed, thinly sliced
  • 2 tbsp mirin
  • 120g white rice
  • 1 head brocolli (florets only)
  • 2 tbsp olive oil
  • 250g grass fed beef steak, thinly sliced
  • 1 inch piece fresh ginger, peeled and finely chopped
  • 3 tbsp tamari sauce

  • Place the peppers in a bowl and mix in the mirin and season with salt and pepper. Set aside to marinade, stirring occasionally for around 10 minutes.
  • Pop the rice and 1 cup of salty water into a pan and bring to the boil. Once boiling, reduce the heat to low and place on a lid and cook for around 14 minutes (or until tender) making sure the rice doesn’t stick to the bottom. Once cooked removed it from the heat and fluff the rice with a fork. Stir in the peppers and any juice and season with salt and pepper.
  • While the rice is cooking place the broccoli into a frying pan on high heat and toast for 7-8 minutes or until lightly browned and softened. Set aside.
  • In the same empty pan heat the oil on high and add the steak. Cook in one layer for 2 minutes and then flip. Add the ginger, tamari sauce, cooked broccoli and 2 tbsp water and continue cooking for a few more minutes.
  • Divide the pepper rice between 2 dishes and then top each with the cooked beef and broccoli.
