Sweet Potato Hash Recipe
SERVES 4
Ingredients
- 320g sausages, sliced
- 6 slices organic bacon, diced
- 1 tsp coconut oil
- 3 cloves garlic, diced
- 1 onion, diced
- 380g sweet potato, peeled and grated
- 80g kale
- 1 avocado sliced
Directions
- Cook the sausages and bacon in a deep frying pan until cooked through.
- Take out of the pan once cooked and put to the side but leave the fat in the pan.
- Add the coconut oil, garlic and onion and cook until translucent, then add the sweet potato.
- Cook this for around 5 minutes stirring often.
- Add in the kale and stir until it wilts and then add the cooked sausage and bacon and mix.
- vServe hot. Season with salt and pepper and top with avocado.
