Sweet Potato Hash Recipe

SERVES 4

Ingredients

  • 320g sausages, sliced
  • 6 slices organic bacon, diced
  • 1 tsp coconut oil
  • 3 cloves garlic, diced
  • 1 onion, diced
  • 380g sweet potato, peeled and grated
  • 80g kale
  • 1 avocado sliced

Directions

  • Cook the sausages and bacon in a deep frying pan until cooked through.
  • Take out of the pan once cooked and put to the side but leave the fat in the pan.
  • Add the coconut oil, garlic and onion and cook until translucent, then add the sweet potato.
  • Cook this for around 5 minutes stirring often.
  • Add in the kale and stir until it wilts and then add the cooked sausage and bacon and mix.
  • vServe hot. Season with salt and pepper and top with avocado.
