Sweet Potato Pancakes Recipe

Sounds strange but they taste amazing. Try to use vanilla protein powder if you have it. They taste a lot like cakes! Very very nice. They tend to stay quite thick which is lovely.
Sweet Potato Pancakes Recipe
SERVES 4
Ingredients
- 160g mashed cooked sweet potato
- 200g almond flour
- 2 large eggs
- 60ml almond/coconut/cashew milk
- ½ tsp vanilla extract
- ½ tsp cinnamon
- ½ tsp nutmeg
- 40g protein powder (optional, used to keep to macros below)
- 1 tsp coconut oil
Directions
- Mix together the sweet potato, almond flour, eggs, milk, vanilla extract, cinnamon, nutmeg and protein powder (if using) in a blender/food processor until well combined. This mixture is meant to be thick.
- Heat up a non-stick frying pan and add the coconut oil. This mixture works best in small amounts as it is easier to flip. Spoon the mixture in small amounts into the pan.
- Cook until the edges are dry and the bottom is browned, carefully flip and pat flat with your spatula. Cook until the other side has browned.
- These go really well with yoghurt and berries.
