Sweet Potato Pancakes Recipe

SERVES 4

Ingredients

  • 160g mashed cooked sweet potato
  • 200g almond flour
  • 2 large eggs
  • 60ml almond/coconut/cashew milk
  • ½ tsp vanilla extract
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • 40g protein powder (optional, used to keep to macros below)
  • 1 tsp coconut oil

Directions

  • Mix together the sweet potato, almond flour, eggs, milk, vanilla extract, cinnamon, nutmeg and protein powder (if using) in a blender until well combined. This mixture is meant to be thick.
  • Heat up a non-stick frying pan and add the coconut oil. This mixture works best in small amounts as it is easier to flip. Spoon the mixture in small amounts into the pan.
  • Cook until the edges are dry and the bottom is browned, carefully flip and pat flat with your spatula. Cook until the other side has browned. Serve with fresh pineapple and sprinkle over desiccated coconut. Also works well with yogurt.
