Thai Green Curry Paste Recipe

Ingredients

  • 4 green chillies, deseeded and chopped (more if you like is really spicy)
  • 6 shallots, peeled and chopped
  • 6cm cube fresh ginger, chopped
  • 6 garlic cloves
  • Large bunch fresh coriander
  • 3 fresh lemongrass stalks
  • 2 limes, zest and juice
  • 12 fresh kaffir lime leaves (or dry), stems removed
  • 1 tbsp galangal
  • 2 tbsp ground coriander
  • 2 tsp ground cumin
  • 2 tsp ground black pepper
  • 4 tbsp fish sauce
  • 2 tbsp olive oil

Directions

  • Blend all ingredients together until smooth. This makes a large batch. I usually use 4 heaped tablespoons of this per 4 servings of thai curry. So I place in small bags 4 heaped tsp and freeze, and defrost when needed.
