Tomato Soup Recipe

SERVES 3

Ingredients

  • 4 cans chopped tomatoes
  • 500ml vegetable stock
  • 14 fresh basil leaves
  • 1 can coconut milk
  • 2 tbsp coconut butter (optional)
  • Salt and pepper to taste

Directions

  • In a large pan add all ingredients and bring to the boil whilst stirring.
  • Using a hand blender, blend all ingredients together in the pan until smooth (or do in small batches in a food processor). Then turn the heat down and allow to simmer for 10 minutes.
  • Season with salt and pepper to taste. Serve hot.
