Vegan Carrot Salad Recipe

SERVES 2

Ingredients

  • Handful almonds, chopped small (can use nutri bullet)
  • 5 large carrots, peeled and grated
  • 1 apple, cored and diced small
  • ½ red onion, finely chopped
  • 2 dates finely chopped
  • small bunch fresh parsley, chopped

Dressing

  • 15 cashew nuts
  • 4 tbsp olive oil
  • Juice from 1 lemon
  • 2 dates
  • 1 tsp wholegrain or Dijon mustard

Directions

  • In a dry frying pan on medium/high heat add the chopped almonds and toast in the pan until they start to brown and become very fragrant (around 10 minutes).
  • Add these into a large bowl and add the rest of the ingredients and give it a good mix.
  • To make the dressing pop all the dressing ingredients into a nutri bullet or food processor and mix until smooth.
  • Add dressing to the salad bowl and some salt and pepper.
  • Mix well and serve.
