Vegan Quinoa Cashew Salad Recipe

SERVES 2

Ingredients

  • 30g cashew nuts
  • 1 bag cooked quinoa 250g
  • 2 spring onions
  • 2 chopped peppers mix of colours
  • 1 tsp fresh chopped chilli
  • half bunch fresh parsley chopped

Dressing

  • 1 cloves garlic, peeled
  • 1 tsp Dijon mustard
  • 1 tbsp red wine vinegar
  • 4 tbsp olive oil
  • 1 tsp honey
  • 1 spring onion

Directions

  • In a dry frying pan on medium/high heat add the cashew nuts and toast in the pan until they start to brown and become very fragrant (around 10 minutes).
  • Add to large bowl and add all other ingredients and mix.
  • To make the dressing place all dressing ingredients into a nutri bullet/food processor and mix until smooth.
  • Add dressing to salad and mix well.
  • Serve.
