Bean and Tofu Stew

A great meal when you’re needing something warm. Goes lovely with crusty bread.

Ingredients

  • 2 tsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cans chopped tomatoes 2 tsp mixed herbs 1 can butter beans, drained 1 can
  • kidney beans, drained 300g smoked tofu, chopped
  • 2 tsp bouillon powder
  • 400g frozen mixed vegetables

Directions

  • In a pan, add the oil, onion and garlic and cook on high heat for a few minutes until the onion starts to caramelise and soften.
  • Add the tomatoes, mixed herbs and bouillon powder and mix.
  • Add the butter beans, kidney beans, tofu and frozen veg and bring it all to a boil. Then turn the heat down and simmer for 10 minutes.
  • Serve hot.
