Bean and Tofu Stew
A great meal when you’re needing something warm. Goes lovely with crusty bread.
Ingredients
- 2 tsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans chopped tomatoes 2 tsp mixed herbs 1 can butter beans, drained 1 can
- kidney beans, drained 300g smoked tofu, chopped
- 2 tsp bouillon powder
- 400g frozen mixed vegetables
Directions
- In a pan, add the oil, onion and garlic and cook on high heat for a few minutes until the onion starts to caramelise and soften.
- Add the tomatoes, mixed herbs and bouillon powder and mix.
- Add the butter beans, kidney beans, tofu and frozen veg and bring it all to a boil. Then turn the heat down and simmer for 10 minutes.
- Serve hot.
