Baked Eggs in Mushrooms

A simple meal you can have for breakfast or lunch.


  • 4 large mushrooms (around 80-100g per mushroom), stalks removed
  • 1 tbsp olive oil
  • 1 garlic clove, finely chopped
  • 1/2 tsp thyme
  • 300g cherry or vine tomatoes, halved
  • 4 medium eggs
  • 1/2 tsp basil
  • 50g rocket


  • Preheat oven to 200°C.
  • Pour the oil into a large oven dish and, using a brush, dip it into the oil and brush over the mushrooms and the pan to grease.
  • Sprinkle the garlic and thyme over the mushrooms.
  • Cover the dish with a lid or foil and bake in the oven for 20 minutes.
  • Take the dish out of the oven.
  • Add the tomatoes around the mushrooms and crack an egg on the top of each mushroom.
  • Sprinkle the basil over the top of the eggs and season with salt and pepper.
  • Bake in the oven for 10-15 minutes or until the whites of the eggs have set.
  • Remove from the oven and serve onto 2 plates and add the rocket.
