Baked Eggs in Mushrooms
A simple meal you can have for breakfast or lunch.
Ingredients
- 4 large mushrooms (around 80-100g per mushroom), stalks removed
- 1 tbsp olive oil
- 1 garlic clove, finely chopped
- 1/2 tsp thyme
- 300g cherry or vine tomatoes, halved
- 4 medium eggs
- 1/2 tsp basil
- 50g rocket
Directions
- Preheat oven to 200°C.
- Pour the oil into a large oven dish and, using a brush, dip it into the oil and brush over the mushrooms and the pan to grease.
- Sprinkle the garlic and thyme over the mushrooms.
- Cover the dish with a lid or foil and bake in the oven for 20 minutes.
- Take the dish out of the oven.
- Add the tomatoes around the mushrooms and crack an egg on the top of each mushroom.
- Sprinkle the basil over the top of the eggs and season with salt and pepper.
- Bake in the oven for 10-15 minutes or until the whites of the eggs have set.
- Remove from the oven and serve onto 2 plates and add the rocket.
