Baked Eggs in Peppers with Spinach
Super simple and can be baked in the oven while you’re getting yourself ready for the day.
Ingredients
- 2 red peppers
- 100g spinach
- 4 medium eggs
Directions
- Preheat oven to 200°C.
- Cut the red peppers in half and scoop out the seeds.
- Cook the spinach in a dry frying pan on medium heat for 4-5 minutes until wilted. Season with salt and pepper.
- Place the peppers into an oven dish. Divide the spinach between each half of the peppers and place in the bottom.
- Crack an egg into each pepper, doesn’t matter if it spills over, and season with salt and pepper.
- Bake in the oven for 20 minutes or until the whites have set. Serve.
