Beetroot Brownies

Beetroot works really well with cacao. The deep flavours and sweetness of beetroot really brings out the bold chocolate taste of cacao while adding some sweetness. This is also super simple to make.


  • 150g raw beetroot
  • 10 dates, seeds removed
  • 5 medium eggs
  • 3 tbsp room temp coconut oil
  • 4 tbsp maple syrup
  • Pinch salt
  • 100g cacao powder


  • Preheat oven to 200°C.
  • Place all ingredients into a food processor and mix until smooth.
  • Line a baking dish with baking paper and place in the mixture so it’s only 1 inch thick.
  • Bake in the oven for 25 minutes.
  • Place on a cooling rack to cool.
  • Then slice into segments.
