Beetroot Crunch Salad
A lovely crunchy salad with raw veg and seeds and full of flavours with sweet beetroot and apple. A lovely spring salad.
Ingredients
- 20g walnuts, chopped
- 20g sunflower seeds
- 20g pumpkin seeds
- 160g raw beetroot, grated
- 90g courgette, grated
- 35g spinach
- 80g borlotti beans (from can, drained & rinsed)
- 1/2 apple, cored and thinly sliced
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1/2 tsp honey/maple syrup
- Juice from 1/2 lemon
- 2 tbsp hummus
Directions
- Toast the walnuts and seeds in a dry frying pan on high heat for a few minutes, until they become fragrant and start to brown.
- Place these in a large bowl with the beetroot, courgette, spinach, beans, and apple, and stir well.
- To make the dressing, add all the oil, balsamic vinegar, honey, and lemon juice into a small bowl and whisk together.
- Pour over the bowl of salad and mix well.
- Serve out your portions and pop 1 tbsp hummus on top of each serving.
