Beetroot Crunch Salad

A lovely crunchy salad with raw veg and seeds and full of flavours with sweet beetroot and apple. A lovely spring salad.

Ingredients

  • 20g walnuts, chopped
  • 20g sunflower seeds
  • 20g pumpkin seeds
  • 160g raw beetroot, grated
  • 90g courgette, grated
  • 35g spinach
  • 80g borlotti beans (from can, drained & rinsed)
  • 1/2 apple, cored and thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1/2 tsp honey/maple syrup
  • Juice from 1/2 lemon
  • 2 tbsp hummus

Directions

  • Toast the walnuts and seeds in a dry frying pan on high heat for a few minutes, until they become fragrant and start to brown.
  • Place these in a large bowl with the beetroot, courgette, spinach, beans, and apple, and stir well.
  • To make the dressing, add all the oil, balsamic vinegar, honey, and lemon juice into a small bowl and whisk together.
  • Pour over the bowl of salad and mix well.
  • Serve out your portions and pop 1 tbsp hummus on top of each serving.
