Beetroot Latte

If you love beetroot then you just have to try this!

Ingredients

  • 100g cooked beetroot
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp vanilla bean paste
  • 1 tsp maple syrup
  • 360ml coconut milk (or any milk)

Directions

  • To cook beetroot, wrap a beetroot in foil and bake in the oven at 200°C for around 30 mins or until a knife is easily inserted.
  • Peel once cool.
  • Place all ingredients (including the beetroot) into a blender and blend until smooth.
  • Heat in a pan, do not boil.
  • Serve.
