Blackberry Roasted Lamb and Potatoes
A great roast, which is simple and sweet and great for a Sunday.
Ingredients
- 1kg lamb leg joint
- 2 red onions, chopped into wedges
- 4 garlic cloves
- 1kg red potatoes, skin on, cut into wedges
- 1 tbsp olive oil
- 1 tbsp rosemary
- 100g blackberries
- 1 tbsp honey
- Zest and juice from 1 lime
- 480g broccoli cut into florets
Directions
- Preheat oven to 180°C.
- In a large oven dish, place the onions in the centre and dot around the garlic. Place the lamb on top and arrange the potato wedges around the edge.
- Drizzle olive oil over the potatoes, sprinkle rosemary over everything, and season well with salt and pepper.
- Cook in the oven for 2 hours.
- After 1 hour of cooking, take it out of the oven. Mix blackberries, honey, lime zest, and juice together in a pot, crushing the blackberries slightly. Drizzle this mixture over the lamb and put it back in the oven for the final hour.
- 10 minutes before the end of the cooking time, boil or steam the broccoli for 8 minutes.
- Serve up the potatoes and broccoli, slice the lamb, and pour the remaining juices and onions from the pan over the dishes. Enjoy!
