Blueberry and Blackberry Cheesecake

A great simple dessert that requires no cooking. Use small glasses for this as they will look fuller.

Ingredients

  • Berry Sauce
    • 160g mix of blueberries and blackberries
    • 1 tbsp maple syrup
    • 1 tbsp fresh lemon juice
    • 2 tbsp water
    • 1/4 tsp cinnamon
  • Base
    • 36g almond flour
    • 1.5 tbsp maple syrup
    • 1 tbsp coconut oil, melted
    • Pinch of salt
  • Cheesecake
    • 270g 0% fat Greek yoghurt
    • 60g reduced fat soft cheese
    • 1 tsp vanilla bean paste

Directions

  • Pop the berry sauce ingredients in a small pan and simmer for 5 minutes. Mash the berries up a little with a spoon. Leave to cool.
  • Get out 2 small glasses.
  • Mix together the base ingredients in a bowl and then push into the bottom of each glass.
  • Next mix together the cheesecake layer and pop this on top of the base.
  • Finally top both pots with the berry sauce and enjoy!
