Blueberry and Blackberry Cheesecake
A great simple dessert that requires no cooking. Use small glasses for this as they will look fuller.
Ingredients
- Berry Sauce
- 160g mix of blueberries and blackberries
- 1 tbsp maple syrup
- 1 tbsp fresh lemon juice
- 2 tbsp water
- 1/4 tsp cinnamon
- Base
- 36g almond flour
- 1.5 tbsp maple syrup
- 1 tbsp coconut oil, melted
- Pinch of salt
- Cheesecake
- 270g 0% fat Greek yoghurt
- 60g reduced fat soft cheese
- 1 tsp vanilla bean paste
Directions
- Pop the berry sauce ingredients in a small pan and simmer for 5 minutes. Mash the berries up a little with a spoon. Leave to cool.
- Get out 2 small glasses.
- Mix together the base ingredients in a bowl and then push into the bottom of each glass.
- Next mix together the cheesecake layer and pop this on top of the base.
- Finally top both pots with the berry sauce and enjoy!
