Blueberry Pancakes
Simple pancake mixture. Cooking the blueberries in the mixture brings out the deep purple colour and makes the pancakes look so good. Fun to stack in a big pile.
Ingredients
- 60g almond flour
- 4 medium eggs
- 1/4 tsp cinnamon
- 60g blueberries, chopped
- 1 tsp olive oil
- 90g Greek yogurt
- 1 tsp honey
Directions
- Blend together the almond flour, eggs, and cinnamon until smooth. Then add the blueberries and mix with a spoon.
- In a frying pan on medium heat, add the oil and then place the mixture in small batches, roughly the size of a jam jar circumference.
- Cook until golden and then turn and cook until the other side is golden. Transfer onto a plate. Keep doing this process until all the mixture is used.
- Divide the pancakes between 2 plates and place 1/2 of the Greek yogurt on top and drizzle over 1/4 tsp honey over each.
