Breakfast cake
A simple bake, super easy. Really nice as a breakfast snack or even a dessert.
Ingredients
Dry
- 190g all-purpose wheat flour
- 40g rolled oats
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp ground cinnamon
- Pinch of salt
- 160g mixed berries, frozen
Wet
- 1 mashed banana
- 2 medium eggs
- 120g 0% fat Greek yogurt
- 1 tsp vanilla extract
- 120ml oat milk, unsweetened
- 70g honey
Directions
- Preheat the oven to 180°C and line a bread tin with baking paper.
- In a large bowl, mix together the dry ingredients (except the berries).
- In a separate bowl, mix together all wet ingredients.
- Add wet ingredients to dry and give it a good mix.
- Lightly fold in the berries then pour the mix into your tin.
- Bake for 40-45 minutes or until a knife inserted in the centre comes out clean.
- Take out of the oven and leave to cool for at least 15 minutes.
