Breakfast cake

A simple bake, super easy. Really nice as a breakfast snack or even a dessert.

Ingredients

Dry

  • 190g all-purpose wheat flour
  • 40g rolled oats
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp ground cinnamon
  • Pinch of salt
  • 160g mixed berries, frozen

Wet

  • 1 mashed banana
  • 2 medium eggs
  • 120g 0% fat Greek yogurt
  • 1 tsp vanilla extract
  • 120ml oat milk, unsweetened
  • 70g honey

Directions

  • Preheat the oven to 180°C and line a bread tin with baking paper.
  • In a large bowl, mix together the dry ingredients (except the berries).
  • In a separate bowl, mix together all wet ingredients.
  • Add wet ingredients to dry and give it a good mix.
  • Lightly fold in the berries then pour the mix into your tin.
  • Bake for 40-45 minutes or until a knife inserted in the centre comes out clean.
  • Take out of the oven and leave to cool for at least 15 minutes.
