Breakfast Cookie

Small but filling. These cookies are great to try for breakfast or even nice as an afternoon snack to keep you going untildinner.

Ingredients

  • 180g oats
  • 100g almond flour
  • 2 servings of vanilla vegan protein powder
  • 1/2 tsp cinnamon
  • 1 tsp bicarbonate of soda
  • 40g chia seeds, ground
  • 160ml water
  • 50g coconut oil, melted
  • 1 tsp vanilla essence
  • 50g maple syrup
  • 140ml unsweetened coconut milk
  • 80g dried cranberries

Directions

  • Preheat the oven to 180°C.
  • In a large bowl, mix together the oats, almond flour, protein powder, cinnamon, and bicarbonate of soda.
  • In a small pot, mix the ground chia seed with the water until it reaches an egg-like consistency. Add this chia mix and all other ingredients to the bowl and stir well.
  • Get out a large baking tray and line it with baking paper. To make the cookies, pull out a small palm-size amount of dough and shape it into a cookie. Place it on the tray and gently pat it to make it around 1cm thick. Repeat this process until all the mixture is used. This should make around 14 cookies, roughly 3.5 inches wide.
  • Place the cookies in the oven and bake for 20-25 minutes or until they are golden.
  • Remove the cookies from the oven and place them on a cooling rack until they are cooled. Enjoy!
